Last Lunch of the School Week

I've been so busy that I have actually been spacing out appointments and skipping practices. I missed the girls' dentist exams today and had to reschedule them. We skipped soccer practice yesterday because everything was becoming too much. Knowing when to let go is a valuable parenting tool I wish I'd learned a decade ago. I'm thankful I have it now. We all needed that breather last night. My husband comes home tomorrow. Phew! We've almost made it! I can't believe I'm the same woman who handled everything for 8, 12, and 15 months while her husband was in a foreign land. It's amazing how much I've come to expect his role in this family (that statement surely must sound odd to a nonmilitary family). Once so used to doing it all myself, now I welcome the division of responsibility and miss it sorely when it's gone. :)

Anyway, lunch. I can't believe I'm letting myself do this, but Fancy talked me into making her a Breakfast for Lunch like her classmates had. Oh, well. At least I know what's in it.

She has cold cereal (milk to pour over also serves as her drink), orange segments, grapes, and strawberry cream top yogurt.

Bayberry's lunch is more traditional. For those of you new to the blog, Bayberry has access to a microwave at school, which broadens our lunch-packing horizons.

A hot dog on a whole wheat bun (ketchup in the little container), a tomato, whole wheat pasta with cheese & turkey pepperoni; orange segments and grapes, and pomegranate yogurt. Apple cider to drink.

  1. My husband is retired with 20 years as a Navy officer. He went on 2 6-month deployments and flew in Operation Desert Shield. This was before we had kids, and I cannot IMAGINE handling life with kids during a deployment. We waited to have kids until he had a shore assignment because my husband saw how hard it was for his buddies to leave their little ones behind.

My husband just started a new job that requires 8 weeks of training and he is now out of the house 12 hours a day and that is QUITE ENOUGH for me to try and handle! And our boys are both teens now... My hat's off to military wives with kids!

  2. I applaude you military mamas! Last summer and fall, my husband held two part-time jobs in addition to his full time job. He left the house at 7am most days and didn't get home until 10-11pm. I understand the stress on you to get it all done. Luckily, he's back to just his full-time job, so he's home every night. It's a blessing, for both me and our kids.

Now, I did have a question. Do you put a sauce on your pepperoni pasta salad or is it as simple as noodles, pepperoni and cheese (mozzarella?)? Thanks so much for this great blog!

  3. Hi Kristen, I tossed the noodles with olive oil when I prepared them so that they wouldn't stick together, but there's no sauce on them. Just the cheese and pepperoni. The cheese is a Mexican blend, but mozzarella would be great.

  5. Hi! Where do you find the little turkey peperoni?

  6. I found it in the meat department of my grocery store. It's made by Hormel. Hope that helps.
